Wheat Chocolate Chip Cookies
1 cup melted butter
1 tablespoon Vanilla extract
2 cups thawed frozen apple juice concentrate
3 eggs, beaten
1 3/4 cups oat bran
1 cup dry milk powder
2/3 cup wheat germ
4 1/2 teaspoons baking powder
2 cups miniature chocolate chips
1. Combine butter, vanilla, apple juice concentrate and eggs
into a bowl and mix well
2. Stir in mixture of whole wheat flour, oat bran, dry milk
powder, wheat germ and baking powder just until moistened
3. Fold in chocolate chips
4. Drop by teaspoonfuls onto ungreased cookie sheet
Bake at 375 F for 8 to 9 minutes or until set. Remove to wire
rack to cool.
Makes 36 servings. 22 carbohydrates per serving.
Note: May substitue margarine for butter. May substitute 1
3/4 cups unbleached white flour for oat bran. |
