Cashew Chicken Salad Sandwiches

1/4 cup fat-free sour cream
1 tablespoon light mayonnaise
1/4 teaspoon curry powder
2 cups (about 2 breasts) chopped roasted skinless, boneless chicken breasts
1/3 cup chopped celery
2 tablespoons chopped dry-roasted cashews
1 tablespoons chopped green onions
2 (2-ounce) whole wheat hamburger buns
2 hard boiled eggs, chopped


1. Combine first 3 ingredients in a large bowl, stirring until well blended. Add chicken, celery, cashews, and green onions; stir well. Serve chicken salad on buns.

Makes 2 servings. 31.6 grams protein.

Tip: Add lettuce and tomato to make the sandwich complete!
